It’s What’s For Dinner ~ December 3rd 2016

The American and Canadian Thanksgiving holidays have come and gone. Who still has leftover turkey lurking their fridges? Not, I …. Our Thanksgiving here in Canada is celebrated in October, so leftover turkey is merely a fond memory… At least until Christmas Dinner when we can rejoice once again with the bounty of our harvests and feeling so stuffed ourselves that we want to just toss out the dinner dishes into the garbage can, instead of wobbling up to the kitchen sink to wash them all.. And, believe me there’s always a ton of dishes to be washed after a Christmas meal.

One year when I wasn’t feeling up to cooking a large meal for the holidays, I cooked up a few simple pork chops dressed up to the nines with the added flavor of pineapple. Since, I’ve begun a challenge of sorts over on YouTube with a group of gardeners who are buying pineapples in the grocery store, ripping off the tops and attempting to grow them over a period of 18- 24 months. Well, I over a months time (Back in September) bought 5 pineapples and plopped them into some potting soil and hoped for the best. Thinking that out of the five tops, one might just survive and grow for me. Well, to make a very long story short all five of the tops are growing beautifully and now I’m faced with where are they going to go when they out grow the stand I have them on. But, that dilemma is for another time .. On with “What’s For Dinner !”

Glazed Pork with Pineapple

This is a simple dish with very few ingredients. No need to really measure anything for this as it’s purely to taste… But, don’t forget the grated fresh ginger…
